Ingredients
1 (4 lb) lean beef rib roast, trimmed of visible fat
1 1⁄2 tsp salt
1⁄2 tsp black pepper, freshly ground
1⁄4 cup dijon mustard
2 tbsp reduced calorie mayonnaise
1 1⁄2 tsp prepared horseradish
2 clove garlic, minced
1⁄4 cup fresh parsley, chopped
2 tbsp fresh dill, chopped
2 tbsp fresh thyme, chopped

Preheat oven to 375 degrees F (190 degrees C). Season roast with salt and pepper.
In a small bowl, combine mustard, mayonnaise, horseradish, and garlic. In another small bowl, combine parsley, dill, thyme, and 1 tablespoon of mustard mixture.
Place the meat with the rib-bone down in a roasting pan. Coat the top with mustard mixture and cook until an instant-read thermometer inserted into the center of roast registers 110 degrees F (43 degrees C). Coat the top with remaining mustard mixture and press herbs onto roast with your hands. Continue cooking until an instant-read thermometer inserted into the center of roast registers 140 degrees F (60 degrees C) for medium or longer to desired degree of doneness. Cover loosely with foil and let stand for 20 to 30 minutes before carving.
