Apple Crumble Pie



Ingredients 



1 cup all-purpose flour
2 tsp sugar
1⁄4 tsp table salt
3 tbsp unsalted butter, cut into small chunks
2 tbsp water, or more as needed
4 medium apple, peeled, cored and sliced 1/4-inch thick
1⁄4 cup sugar
1 tbsp all-purpose flour
1⁄4 tsp ground cinnamon
1⁄4 tsp ground nutmeg
1 tsp fresh lemon juice
1 tbsp water, at room temperature
2 tbsp unsalted butter
1⁄3 cup rolled oats
5 tbsp all-purpose flour
2 tbsp sugar

Directions

  1. Place oven rack in middle of oven. Preheat oven to 400 degrees F (200 degrees C).
  2. To make crust:
  3. Coat a 9 inch pie plate with cooking spray.
  4. Combine 1 cup flour, 2 tsp sugar, and salt in bowl of a food processor fitted with a steel blade; whiz to combine.
  5. Scatter 3 tbsp butter chunks over flour mixture; pulse until dough resembles coarse meal. Slowly add water, adding another tablespoon if needed, until dough comes together.
  6. Place dough in prepared pan and press dough up sides and around bottom to form a crust; prick bottom of crust with a fork 5 or 6 times.
  7. To make filling:
  8. Combine apples, 1/4 cup sugar, 1 tbsp flour, cinnamon, nutmeg, lemon juice, and 1 tbsp room temperature water in a medium bowl and toss gently to combine.
  9. To make crumble:
  10. In a small saucepan, melt 2 tbsp butter. Add oats, 5 tbsp flour, and 2 tbsp sugar; stir to combine.
  11. To make pie:
  12. Evenly spread filling over crust. Scatter crumble over apples.
  13. Bake for 20 minutes.
  14. Reduce heat to 350 F (175 degrees C) and continue baking until crust and crumble are golden and apples are juicy, about 30 to 40 minutes. If you like your apple filling a bit saucier, bake for an additional 10 minutes.
  15. If pie crust or crumble is getting too dark, cover with foil for last 20 minutes of baking.
  16. Let rest at least 30 minutes before slicing into 8 pieces and serving.
  17. Note: use a variety of apples such as McIntosh, Granny Smith and Jonagold.
